Punjab Grill’s Butter Chicken

For all the Butter Chicken Lovers !

So, I was lucky enough over the last weekend to host a cooking demo masterclass with Punjab Grill’s Executive Chef, Mr. Javed Ahmed.

He demonstrated three scrumptious dishes but my favourite (in fact probably everybody’s favourite) was the  delicious, gastronomic, finger licking good Butter Chicken. Butter chicken (or murgh makhani) is part of Indian cuisine, popular in countries all over the world. The origins of butter chicken can be traced back to Britain, where Indian chefs created a dish to suit the European palate.

Upon request, Mr. Javed was kind enough to e-mail us his secret recipe.  Get a pen and paper ready & check it out!

MURGH MAKHANI ( BUTTER CHICKEN ) for 4 pax

INGREDIENTS

  1. CHICKEN BONELESS ; 300gm
  2. HUNG CURD ; 100gm
  3. RED CHILLI POWDER ; 2 tsp
  4. GINGER GARLIC  paste ; 4tsp
  5. LEMON Juice ; ½ tsp
  6. Salt to taste

Method :

1.Take a hung curd in a bowl .whisk it well

2.Add  ginger garlic paste ,red chilli powder ,Salt to taste ,lemon juice ,

3.Add chicken and mix it well.

4.Keep it for 10 to 15 min

5.Cooked it in oven 200 tem.for 10 min

For makhani sauce .

  1. Tomato puree ; 200 gm
  2. Cashewnut paste ; 100 gm
  3. Ginger garlic paste ; 20 gm
  4. Red chilli powder ; 2 tsp
  5. Kasoori methi powder ; ½ tsp
  6. Garam masala powder ; 1tsp
  7. Cardamom powder ; 1 tsp
  8. Honey ; 2 tps
  9. Olive oil ; 30 ml
  10. Fresh Cream ; 50 ml
  11. Fresh Corainder chopped ; 2tsp
  12. Salt to taste

Method 

1.Heat oil in a sauce pan .add ginger garlic paste ,sauté it for 5 min .

2.Add tomato puree cooked  ..tomato puree    .. until raw flavour will gone .

3.Add cashewnut paste ,kasoori methi powder garam masala powder

4.Cooked again for few mintues ,then add cooked grilled chicken in the sauce .

5.To wards the end add salt to taste ,add cream and honey mix it well

6.Serve it hot ,

7.Garnished with fresh chopped coriander
